The Healthy and Weight loss recipe: Ginger Tofu


- 1 lb of firm tofu
- 1 1/2 ts of fresh, grated ginger
- 1 t of roasted sesame oil
- 1 minced garlic clove
- 2 tb of tamari
- 1 1/4 c of water
- 1 1/2 tb of arrowroot

Slice the tofu into small rectangles of 1/4--1/2-inch thickness and place them in a shallow dish or baking pan.

Mix together the ginger, sesame oil, garlic, tamari and water.
Pour this mixture over the tofu and let it marinate for at least 30 minutes.
(If desired, the tofu may be placed in the refrigerator to marinate for several hours or overnight).

Remove the marinated tofu from the liquid, reserving the liquid to make the sauce.
Place the tofu on a well-oiled cookie sheet and bake at 375 deg for 35-40 minutes, or until the desired crispness is reached (the longer the tofu bakes the firmer and crisper it becomes).

To make the sauce, mix the arrowroot with the marinade.
Place the mixture in a small saucepan and bring to a boil.
Cook, stirring constantly, until thickened.

Ginger Tofu may be served with or without the sauce.
With the sauce, serve it over a bed of rice, millet, buckwheat, or pasta.
Add your favorite stir-fried veggies and you have a colorful or nutritious meal.
Ginger Tofu may also be added to a vegetable stew.

3 cups plain or vanilla soy milk ( I love plain)

1 banana, peeled and frozen
1 cup frozen strawberries or raspberries
1 teaspoon vanilla or almond extract
1/3 cup Equal® ( Can it be replaced by honey)

Preparation
Peel and cut banana into large chunks. Place in plastic freezer bag, seal, and freeze at least 5 to 6 hours or overnight. Place all ingredients in blender or food processor. Blend until smooth. (SOURCE)

The Healthy and Weight loss recipe:   Shrimp and Tofu Pad Thai Recipe
Ingredients:
Always to check the ingredients if you have foods allergic codition


8 ounces Rice noodles, dried
1/2 cup Sugar
5/16 cup Ketchup
1/4 cup Water
1 1/2 tablespoons Soy sauce
2 teaspoons Worcestershire sauce
2 tablespoons Vegetable oil ( I would replace this by canola oil)

1 1/2 cups Tofu, firm, drained and diced into 1/2 inch cubes
1 1/2 cups Shrimp, small, cooked
2 teaspoons Garlic, fresh, chopped
1 Egg, beaten
3 cups Bean sprouts, fresh
1/2 cup Edamame, cooked and drained
1/2 cup Green onions, chopped, divided
1/2 cup Peanuts, chopped, divided


Prep time:30 minutes

Cook time:10 minutes

Instructions for Shrimp and Tofu Pad Thai:


Soak noodles for 30 minutes in hot tap water; drain and set aside. (Noodles will be flexible, but not soft.)

Mix sugar, ketchup, water, soy sauce, worchestershire sauce and cayenne pepper in small bowl; set aside.

Heat oil in wok or large frying pan over high heat. Add tofu, shrimp and garlic, stirring constantly, for 3 minutes. Stir in noodles, stirring constantly to keep from sticking. Add ketchup mixture, stirring constantly, for 2 minutes or until sauce is absorbed.

Push noodles to side of pan. Add egg and stir until cooked. Add bean sprouts, edamame, 1/4 cup green onions and 1/4 cup peanuts, stirring until mixed with egg and noodles.

Mound mixture on large serving plate. Sprinkle remaining green onions and peanuts over top. Serve immediately.

The Healthy and Weight loss recipe:   Lime Pear Salad
Wonderful for luncheon. Creamy and light.

Lime flavored gelatin 1 x 3 oz. 1 x 85 g
Boiling water 1 cup 225 ml

Pear juice 1 cup 225 ml
Cream cheese 4 oz. 125 g
Small marshmallows(or 12 large. cut up) 100
Canned pear halves, diced 8
Whipping cream( or 1 envelope topping) 1 cup 250 ml

In a large bowl put gelatin and boiling water. Stir to dissolve.

Add pear juice. Using wire cheese cutter, cut cheese and add in small chunks. Stir in marshmallows. Chill, Stirring now and then until mixture begins to thicken.

Fold in diced pears. Whip cream until stiff. Fold into mixture. Pour into mold or serving bowl. For standing in warm room, better to use a serving bowl since this is not too firm a salad. Serves 12.

5 cups fresh or frozen raspberries
1 cup orange juice
1 tbsp honey (approximately)

-If using frozen berries, defrost them.
-In bowel of food Processor, place raspberries and process until Pureed.
-Strain raspberries through fine sieve to remove seeds
-Place raspberry puree back in bowel of food processor and add orange juice. Puree until smooth.
-Add just enough honey to sweeten the fruit and process until combined. Pour into Popsicle moulds and freeze

Yield: Approximately 8 to 10 Popsicle, depending on the size of moulds.
