Olive oil 1tbsp. 15mL
Thinly sliced red pepper 11/2 cups 375 mL
Thinly sliced yellow pepper 1/12 cup 375mL
Garlic cloves, thinly sliced 3 3
Salt sprinkle
Pepper, sprinkle
Whole wheat baguette bread slices, cut diagonally 1/4 inch (6mm) thick 18 18
Goat (Chevre) cheese, cut up 3Oz. 85g
Finely shredded basil 2tbsp. 30mL
Heat olive oil in large frying pan on medium. Add next 5 ingredients. Cook to about 15 minutes, stirring occasionally, until peppers are softened.
Arrange bread slices on ungreased baking sheet. Broil on top rack in oven for about 1 minute per side until golden.

Basil pesto 1/4 cup 60mL
Unbaked pizza crust (12inch, 30cm diameter) 1 1
Grated Italian cheese blend 1/2 cup 125mL
Finely chopped marinated artichoke hearts 1/4 cup 60mL
Finely chopped salami (Such as Genoa) 1/4 cup 60mL
Finely chopped sun-dried tomatoes in oil 1/4 cup 60mL
Spread pesto on pizza crust. Cut out circle with 2 inch (5cm) round cookie cutter. Arrange on greased baking sheet with sides. Discard remaining pizza crust scraps.
Combine remaining 4 ingredients in a small bowl. Spoon bout 2 tsp. (10mL) onto pizza crust rounds. Bake in 400 degree F (205 degree C) oven for about 12 minutes until cheese is melted and golden. Make about 22 pizzettes.

Tofu is old... Originating in China, it has been around since roughly 200 B.C. As tofu has traveled the globe and been adopted into cuisines everywhere many exciting twists on the timeless classic have emerged, but perhaps none as exciting (and frankly... delicious!) as deep fried tofu.

There are several different varieties of tofu (including firm, silken, flavored, dry and many more) and with the exception of silken tofu (which is very soft) any of the varieties can be used to make fried tofu, each with their own flavors and textures. The majority of fried tofu is of the firm tofu variety and is generally cut into slices about half an inch thick.
The process of frying tofu is much like frying other foods. Most fried tofu has bee deep fried in oil (sesame works great!) until the desired effect is achieved. By removing tofu from the fryer at the right time, you end up with a delicious piece of fried tofu that takes the shape of a fried ball. After cooling, the excess air will find its way out leaving behind the perfect piece of gold brown and delicious tofu.
One of the strong points of tofu is how good it as at absorbing flavors of other foods. Because of this, fried tofu takes on many exciting flavors from the frying process. You can actually taste the difference from a high quality frying oil so don't go cheap and don't be afraid to play with different types of oil such as olive, vegetable, sesame, etc as they all result in different tasting tofu.
Fried tofu is not normally called for in tofu recipes though there are several recipes out there to help you create your own. If you decide to make your own, stay away from soft tofu as it will normally fall apart in the fryer and I'd also recommend avoiding any sweet tofu as the sweet taste normally doesn't go well with friend food (for me at least!) - Keep in mind that when selecting your tofu to deep fry, your normally best off looking for the words "firm" or "hard" on the packaging and purchasing a high quality oil to along with it. During the frying process, some recipe's call for spices and herbs so don't be afraid to mix things up!
Fried tofu remains a protein rich food, however the act of frying can increase the calories and fat so enjoy this delicious treat in moderation.

This is a stunner and goes well with salmon fillet or chicken. You need a decent pile of herbs. Use whatever is available with parley, mint and chives as the base.
1 bunch parley
1 bunch mint
2 bunch chives
1 bunch chervil/tarragon
1 tbsp. capers
salt and pepper
2 cloves of garlic - sliced wafer-thin
1 tbsp. Dijon
2 lemon - juiced
200 ml/7fl oz./3/4 cup olive oil
1. Pile the herbs together and chop them roughly.
2. Add the capers, salt and garlic to the pile and chop thoroughly.
3. Put this in a bowl and mix in the mustard, lemon juice and the oil. Seasoning with pepper.
4. Taste it for the balance of lemon and olive oil: you should end up with a rough mush, a delicious looking green mess.

Silken tofu, also known as smooth or soft tofu, is one of the 3 types of natural, unprocessed tofu that you can buy today (the others being firm and dry.) This tofu is unique in the fact that it is incredibly soft compared to everything else on the market. Because its so different from its "tofu brethren" its rarely called for in recipes but if you know how its made and how to use it its a very versatile food choice that can be used as a healthy alternative in place of higher fat dips and creams.
Of all of the natural tofu's, silken/soft tofu is the only one that is not drained during production and this is exactly what causes it to be so soft and to be the most moist of any of the major tofu varieties. The consistency of silken tofu is very much like butter and it can easily be used for spreading or for deserts. While most types of tofu are fairly substitutable, its important to know that you should only use this particular variety when specifically called for in a recipe as it will generally fall apart if used as a substitute for traditional firm tofu.
There are different types of regional customs employed when making soft tofu and this has resulted in several sub categories of this popular food. Most notably, black bean tofu or "Black douhua" is a type of silken tofu which is made from plain black beans and soybeans. This process results in a darker colored tofu with a slightly different (though very pleasant!) taste.
While you don't want to eat or serve silken tofu the same way as traditional firm tofu, there are a number of different methods for preparing and eating it. Its most often served as a spread that can be applied to other foods like crackers or even as a dipping sauce for vegetables - this makes it a very healthy alternatives to high fat processed dips like ranch! In addition to being served as a spread, you'll often find silken tofu served in a small square block with a garnish, or even a sweet sauce poured over the top. Since tofu does such a great job absorbing flavors this can be a very enjoyable meal of paired with something you enjoy,

Scramble eggs or tofu and add your favorite vegan sausage or bacon, fried tempeh (a fermented soy product that can be sliced and fried), or tvp. Roll up in warm tortillas with shredded cheese. Have available as toppings: diced tomatoes, green onions, jalapenos, salsa, sour cream, and hot sauce for adults and brave children to choose from.
Celery boats:
Children like these with peanut butter and raisins. Try them with chocolate peanut butter, sunflower seed butter, or Nutella, too. For adults, fill them with goat cheese and figs, pesto and sundried tomatoes, or cream cheese and strawberry preserves.
Grilled sandwiches:
Grilled cheese can go farther than it used to. Use brie and figs between slices of sourdough; sharp cheddar in rye bread; or mozzarella, fresh basil, and thick slices of tomato in ciabatta bread. For kids, try gouda, mozzarella, parmesan, and even brie. Peanut butter and jam grilled between slices of warm, buttery bread makes lunch as decadent as dessert. Nutella is good grilled between slices of pumpernickel bread, too.
Dinner:
Fried rice:
Beat two eggs lightly and add to an oiled, very hot wok or large skillet. Spread eggs out in an even layer and do not disturb for 30 seconds to one minute until set. Slice with a spatula into small bits and push to one side of the wok. Add 1c frozen mixed vegetables and cook until warm, stirring with spatula (or by tossing with the wok). Add 3c cooked rice and cook, stirring, until warm. Add 1T roasted sesame oil, 1/4tsp ginger and 1/4tsp garlic. Toss. Do not omit sesame oil, as this is what gives the dish its distinct flavor. Season with soy sauce and sweet or hot chili sauce to taste. Serve with spring rolls and barbecued tofu.
Barbecued tofu:
Press a package of extra-firm, non-silken tofu between paper towels to drain. Slice crosswise into 4 "patties." Heat an oiled wok or skillet. Cook tofu until brown on both sides. Remove from wok. Mix 2T honey, 1/4c vinegar, 1/2tsp molasses, 1/4tsp pepper, 1/2tsp ground mustard powder, and 1/4c soy sauce. Cook over med-low heat until slightly thickened. Pour over tofu and serve.
Fajitas:
In an oiled wok or large skillet over high heat, sear chopped onion, green pepper, and zucchini until crisp-tender. Remove from wok. Brown your favorite meat substitute, if desired, and add to vegetable mixture. Clean the center stems from collard leaves. Spoon vegetable mixture into collard and add sour cream, shredded cheese, salsa, or lime juice. Wrap into a burrito shape. Eat, and watch out for the drips!
There are countless other tantalizing recipes that can be adapted to the palates of both kids and adults alike. One way to do this is to leave out sharp and spicy seasonings and let adults season at the table. Bring many toppings and food choices to the table and allow the family to choose what they like. This creates no pressure for the children to eat something they're not comfortable with, but also leaves the door open for them to try new things in a natural way, as they are ready.

Nothing can bring home that wonderful taste of Italy like a good helping of home cooked spaghetti. Perhaps you have found that spaghetti at your local restaurant or Olive Garden style chain just isn't quite what the doctor ordered. The store bought brands are even worse -. watery and weak! Of course, for those of us wishing to add spaghetti into our vegetarian lifestyle, the choices can be even more depressing. Unless you favor tomato water as the sauce for your noodles, the absence of ground beef can really make a difference in the taste of your homemade spaghetti sauce. Thankfully, with the substitution of tofu, homemade spaghetti sauce can retake its place in the healthy vegetarian diet. Here is one recipe you can use to liven up your vegetarian dinner, and enjoy a delicious spaghetti meal without watering down your sauce.
Ingredients:
3 tablespoons olive oil
2 tablespoons roasted garlic
1 lb tofu
Two 28 oz cans crushed tomatoes
Two 6 oz cans tomato paste
1 teaspoon black pepper
1 teaspoon oregano
1 tablespoon salt
½ teaspoon thyme
1 tablespoon basil
1 tablespoon sugar
Thin spaghetti noodles
Begin by placing a skillet on a medium heat eye, with your olive oil and roasted garlic in the center. Allow this mixture to heat up, stirring until it begins to sizzle. At this point, add your tofu and allow it to cook and soak in the mixture, stirring and chopping the tofu as you cook. Once the tofu is fully cooked, drain it in a colander and dump the ground cooked tofu into a pot. Add to the tofu your tomato paste and crushed tomatoes, along with the pepper, oregano, salt, thyme, basil, and sugar. Stir this mixture up thoroughly and turn the heat on the eye down to almost low. Place the pot on the eye and allow the mixture to heat up and simmer for at least thirty minutes. The longer the better. Boil your noodles according to the directions on the box, strain them, and your spaghetti is ready to serve. Should serve three to four individuals. Serve with garlic bread if desired.

Marinated tofu makes a delicious main course. Serve with steamed rice (try red or black rice) and a variety of vegetables. Remove the block of tofu from the packet and pat dry. Cut into portion sizes and marinade the pieces for a few hours, overnight or up to 3 days. For stuffed tofu, make little cuts into the tofu with a sharp knife and push the stuffing gently in with the tip of a knife. You can also push the stuffing all the way into the tofu and smooth over the cut to conceal the stuffing. Place the tofu in a small oven proof dish, pour over its marinade, cover with tin foil and bake for 20 - 30 minutes in an oven with the temperature at around 160 - 170°C (320 - 340°F). If you like, you can then grill the tofu briefly (remove the tin foil), until the top starts to discolour. The following recipes serve 2, so use 2 thick slices of tofu per person, or cut ½ of a block (140g) into 2 'steaks'.
Orange & fennel
4 tbsp orange juice
1 tsp grated orange zest / use dried peel and cut into small slivers
1 tsp olive oil (orange-infused is even better)
1 tsp fennel seeds, dry fried in pan and finely ground

Mix all the ingredients together and marinade the tofu for a few hours, overnight or up to 3 days.
Transfer the tofu to a small dish, preferably lined with non-stick baking parchment. Pour over the marinade and cover the dish with tin foil.
Bake on the middle shelf in the oven for 20 minutes at 170°C (340°F). Remove the tin foil and bake a further 5 minutes.
Remove and serve.Ginger & kaffir lime leaf
1 tsp freshly grated ginger
1 - 2 garlic cloves, finely grated
1 tsp soy sauce
1 ml (or to taste) freshly chopped red chilli
1 small kaffir lime leaf, very finely shredded with a pair of scissors

Mix all the ingredients together and marinade the tofu for a few hours, overnight or 2 days (the ginger starts losing its flavour after 2 days). Turn the pieces a few times.
Transfer the tofu to a small dish, preferably lined with non-stick baking parchment. Pour over the marinade and cover the dish with tin foil.
Bake in the oven on the middle shelf for 15 - 20 minutes, covered.
Remove and serve.Maple syrup & peanut
1 tbsp maple syrup
1 tsp peanut oil
2 tbsp toasted peanuts, chopped medium fine
2 ml soy sauce

Mix all the ingredients together and marinade the tofu for a few hours, overnight or up to 3 days.
Transfer the tofu to a small dish, preferably lined with non-stick baking parchment. Pour over the marinade and cover the dish with tin foil.
Bake on a shelf just below the middle of the oven for 15 minutes at 190°C (370°F). Remove the tin foil and bake for a further 3 minutes.
Remove and serve. Also tastes delicious cold, served like a patty on bread for lunch.Thyme studded
4 tbsp fresh thyme: keep the leaves on the little twigs, but remove the thick woody stems
2 tsp olive oil
2 ml balsamic vinegar
1 ml herbal salt
cracked black pepper

Cut incisions into the tofu and stuff with the thyme by pushing the twigs into the tofu with a blunt knife.
Mix the rest of the ingredients together and marinade the tofu for a few hours.
Transfer the tofu to a small dish, preferably lined with non-stick baking parchment. Pour the marinade over and cover the dish with tin foil.
Bake at 170°C (340°F) in the middle of the oven for 20 minutes, covered.
Remove and serve.Garlic stuffed
2 garlic cloves, cut lengthwise into tiny matchsticks
2 tsp olive oil
2 tsp vincotto / balsamic vinegar with a dash of date syrup stirred in
1 ml herbal salt
cracked black pepper

Cut small incisions into the tofu with a sharp knife to make nice clean cuts. Stuff with the garlic by pushing the garlic pieces into the cuts with your fingers.
Mix the rest of the ingredients together and pour over the tofu. Turn the tofu a few times in the marinade.
Transfer the tofu to a small dish, preferably lined with non-stick baking parchment. Pour the marinade over and cover the dish with tin foil.
Bake on the middle shelf in the oven at 180°C (360°F)for 25 minutes. Remove the tin foil and bake just briefly for 2 minutes to protect the garlic.
Remove and serve.

What is vegetarian jerky? It is a meatless type jerky made from wheat gluten, soy flour, and extract of soybeans. This bean paste jerky can be made to taste many different ways, depending on the herbs and spices it is made with. You can buy several different varieties of meatless jerky online or in health food stores.

Soy Bean Patties or Veggie Burgers

Besides vegetarian jerky, veggie burgers are another tasty and healthy soybean based food. There are several ways you can prepare soybean patties. This particular recipe that I am sharing with you is quite easy and very healthy.

Veggies Burgers Ingredients

2 cups soybeans,

1-cup millet or brown rice

½ cup quick cooking oats

½ cup whole-wheat flour

½ onion, diced

1-teaspoon garlic powder

2 tablespoons liquid aminos, or soy sauce

1-teaspoon basil

1-teaspoon oregano

1-teaspoon sea salt

½ teaspoon freshly ground pepper

Preparation

Cook soybeans until done. Cook brown rice or millet according to package directions and set aside. With a fork or potato masher, mash the beans. They don't need to be pureed. You can quickly sauté the veggies, or you can leave them raw, it's really up to you, just make sure they are diced fine if left raw.

Mix all of the ingredients together and form into patties. Bake in the oven for 45 minutes at 350 or fry in a pan with safflower oil. Serve with whole-wheat rolls or bread and condiments of your choice.

Textured Soy Protein

Textured soy protein is similar to vegetarian jerky but is more widely used in packaged and refined foods and sold in retail grocery and health food stores. Vegetarians and health conscience individuals use textured soy protein as a partial substitute for ground meat in recipes.

Soy protein can replace half or all of the meat in meat loaf, hamburgers, meatballs, and many other meat dishes that call for ground beef. The wonderful aspect about soy protein is you will still get lots of protein, which is a great substitute for vegetarians.

Cooking With Tofu

Tofu or bean curd is used extensively in Japanese cuisine. Tofu can be steeped in an aromatic broth, and then broiled stir-fried, or simmered with other ingredients. Because of its delicate texture, tofu takes on the flavor of any sauce or broth it is cooked in.

Tofu is healthy. It has lots of protein, iron, calcium, and B vitamins, and it contains no cholesterol. Here is a quick, easy, and healthy tofu recipe.

Tofu Stir-Fry Ingredients

1 block of tofu

½ cup carrots, sliced thin

2 garlic cloves, diced

3 scallions, diced

1 bell pepper, sliced thin

1-cup mushrooms

¼ cup sesame seeds

¼ cup soy sauce

Olive oil for sautéing

Preparation

Slice the tofu in small bite sized blocks. Heat olive oil in a wok or other pan, and add garlic and stir-fry for 30 seconds. Add the tofu in batches, carefully stirring until lightly browned. Remove tofu from pan and set aside. Add vegetables, sesame seeds, and soy sauce and cook for two minutes. Add the tofu and stir for two more minutes. Serve with Chinese noodles.

Dip two slices of bread into soymilk and egg mixture; immediately fry in butter on medium heat for approximately two minutes per side. Top with fresh strawberries and whipped cream; sprinkle confectioner's sugar on top. Enjoy!

1. Honey - Honey is a natural sweetener that has healing properties. It is a good source of antioxidants and is ideal for treating diarrhea, as it encourages rehydration in the body and soothes the stomach. In addition, honey has free sugar molecules which actually improves brain function and reduces fatigue.
It is imperative that you purchase local raw honey to ensure you are receiving all of its nutrients and enzymes in your crohns recipes. The best place to look for this honey is in health stores.
Recipe tips - Honey is perfect for sweetening your tea and other beverages. Also consider using honey as spread for your bread, and as an alternative to sugar required in certain recipes.

4. Extra Virgin Olive Oil - Extra virgin olive oil is vegetable based and an excellent addition to crohns recipes. This oil helps to protect your intestines as it contains potent antioxidants. Olive oil also increases the body's absorption of a number of vitamins including A, D, E, and K. Furthermore, it encourages faster healing and increases metabolism.

Many omega 3 recipes can be made to obtain adequate amounts of essential fatty acids on a daily basis. Food sources of omega 3 can be combined to make tasty dishes which are liked by people of all ages.
To start with, you may consider mixing flax seed powder with walnuts. 1 cup of both foods combined provides up to 3 grams of omega 3 fats. You can also use flax seed oil for cooking or consume it in its raw form. Usually 1 to 2 tablespoon of this oil is recommended as it lowers the blood pressure and should not be taken in huge quantities at once.
Next in the vegetarian diet are beans. Soybeans, navy beans and kidney beans all provide good quantities of fats. Recipes can be made by cooking or boiling these beans and then using them for a salad. 1 cup of cooked beans provides up to 1 gram of omega 3 fatty acids.
Again, soybean oil can also be used for cooking to obtain good amounts of polyunsaturated or essential fats. Fish, especially salmon, sardines, herring and mackerel are excellent sources of omega 3's. You can fry these fish or make fish fingers to add to your everyday meals. Normally eating fish twice a week is considered enough for fulfilling the needs of the body.
Alternatively, you can also use fish oil to receive your share of fats. Fish oil is easily available in liquid as well as capsule form for people of all ages. It can be consumed 3 to 4 times a day to receive up to 400 mg of fatty acids.
Enriched eggs can also be used for preparing tasty omega 3 recipes. These eggs provide up to 300 mg of omega 3 fats which is about 4 times as provided by regular eggs. These eggs are now available on the market and can be added to breakfast or evening meals for receiving good quantities of fatty acids.
If you love baked foods, then using enriched eggs for baking cakes and making other recipes would be an excellent alternative. Consuming fish oil capsules regularly ensures good health and prevents many diseases like coronary heart disease, cancer, arthritis and Alzheimer's disease.

Note: A cranberry muffin has 4.8 grams of carb.
Ingredients:
12 ounces cream cheese, soft
5 eggs
15 packets Splenda sugar substitute
2 Teasps vanilla
1 ½ cups whole almond meal
1 cup unprocessed wheat bran
1 Teasp baking powder
1 cup whole (fresh or frozen) blueberries
2 Teasps grated lemon peel
Preheat oven to 325ºF. Lightly grease a 12-cup muffin pan (heavy-gauge metal is best). You can also use muffin liners.
Put cream cheese and two eggs in the bowl of an electric mixer. Beat with a flat beater until smooth and fluffy. Add the other eggs, one at a time, beating briefly after each. On slow speed, stir in the rest of the ingredients except the blueberries and lemon peel. When mixture is well blended, stir in the blueberries and lemon peel.
Fill the muffin pans almost to the top. (The muffins will rise only slightly.) Bake muffins for about 20 to 25 minutes or until golden brown. These muffins freeze well. Thaw at room temperature.
Savory Black Soybean Loaf
Note: This tasty bread is easy to make and is gluten-free. It is best baked in mini loaf pans (3x6 inches or similar). Use three pans for this recipe. Black soybeans are low in carbs and rich in fiber and protein. You can freeze this bread, too. One loaf has 11.7 grams of carb.
Serving size, one slice. Carbs per serving, 1.2 grams of carb.
Ingredients:
8 ounces cream cheese, soft
5 eggs
1 cup rinsed, lightly mashed organic black soybeans, drained
¼ cup whey protein powder
½ cup soy protein powder
1 Teasp baking powder
pinch of salt
1 ¼ cups whole almond meal
Preheat oven to 300ºF or 325ºF. Lightly butter three mini loaf pans (use nonstick pans made of heavy-gauge metal). For easy cleanup and removal, cut strips of waxed paper to fit in the bottom of the pans and allow them to hang over the edge by an inch or two.
Put cream cheese and two eggs in the bowl of an electric mixer and beat with a flat beater until smooth and fluffy. Add the remaining eggs, one at a time, beating briefly after each addition. Add the remaining ingredients and blend at low speed or by hand.
Spoon the batter into the pans and bake the bread for about 30 to 40 minutes or until done. Cool before slicing. Keep refrigerated (keeps for about 3 to 4 days). Freeze bread that isn't going to be used soon.

8 ounces mozzarella cheese
2 eggs
1 cup Ritz cracker crumbs
1/4 cup extra-virgin olive oil
Cut mozzarella into 1 inch cubes. Lightly beat the eggs. Dip the cheese cubes into egg and then into crackers' crumbs. Heat the oil in a skillets. (The oil is ready when 1 inch cube of bread sizzles immediately after being dropped into it). Fry the cheese cubes until golden brown.

1 pound pitted green block olives
Zest of lemon
2 springs rosemary leaves only
2 cloves garlic, thinly sliced
Preheat the oven over 400 degree F. Place olives in a baking dish and with a rolling pin, gently push down so skin splits. Mix in lemon Zest, rosemary and garlic. Bake for 15 minutes and serve warm.
Optional: Drizzle 1 tablespoon of olive oil over olives before baking.

These are quick to whip up and can be made either the night before or in the morning. Instead of turkey and Swiss cheese, you can use ham and Cheddar cheese. or use whatever meat you have on hand, slicing it as thin as possible.
1 tbsp. light cream cheese
One 8 inch whole wheat soft flour tortilla
1tsp. mustard (optional)
2 tbsp. shredded Swiss cheese
2 thin slices cooked turkey, torn into pieces
the nigh before, evenly spread cream cheese over tortilla. Spread mustard (if using) over cream cheese and evenly scatter with cheese and turkey. Roll up tighly. With sharp knife, slice into 1-inch round, discarding end. Pack in reusable container and refrigerate overnigh.
Yield; Serve 1 or 2 young children.

Pre heat oven to 475 degree F.
Line a baking sheet with parchment pepper; set aside. In a medium bowl combine 4 fresh asparagus spears chopped; 1/2 of green sweet pepper, chopped; 1/2 medium onion, sliced; 2 fresh mushrooms sliced; 1 teaspoon olive oil and a pinch salt.
Place mixture on prepared baking sheet.
Roast for 10 minutes remove from baking sheet. Place 1 single-serving whole wheat flatbread on the baking sheet; sprinkle with 2 tablespoons grated Pecorino-Romano cheese.
Top with the roasted vegetables and 6 cherry tomatoes, halves.
Sprinkle with 2 tablespoon shredded mozzaralla cheese.
Bake 5 minutes or until cheese is melted. Serve with 1 cup mixed green and 1 cup grapes tossed with 2 tablespoons light vinaigrette dressing.
